Brie, Walnut and Apple Quesadillas
- 1 wedge soft cheese (brie, camembert, fromage d’affinois), rinds removed
- ½ cup walnut pieces, toasted
- 1 honeycrisp apple, sliced very thin
- 2 Tbsp butter
- 4 medium-sized flour tortillas
Heat two frying pans over medium heat. Butter the outsides of each tortilla and lay one in each frying pan. Dollop cheese onto surface of tortilla, using a spoon to spread slightly, until area is mostly covered. Sprinkle with ¼ cup walnut pieces, then layer with apple slices. Top with second tortilla and fry until bottom is crispy and golden, then flip to brown second side.
Remove from heat and allow to cool on a cookie rack for 1 minute, then slice and serve immediately.
