Caramelized Shallot, Goat Cheese Chicken Panini
- 2 tsp olive oil
- 1 shallot, julienned
- 1 Tbsp red wine vinegar
- 2 slices sourdough or focaccia bread
- 3 Tbsp goat cheese (more/less to taste)
- 1 Tbsp mayonnaise
- Small handful arugula or baby kale
- 3 oz chicken, cooked and shredded or diced
Heat the oil over medium heat. Add shallot and stir sporadically for 15-20 minutes, allowing the onion to slowly caramelize. When onions are almost done, douse with red wine vinegar and stir to incorporate.
Meanwhile, prepare the bread. Spread the goat cheese on one slice, and the mayonnaise on the other. Place arugula on top of the goat cheese, then arrange chicken evenly across the top. Once onions are ready, sprinkle them evenly atop the chicken and arugula, then set the second piece of bread face-down on top.
Place the sandwich in a panini machine for 5-10 minutes or until the bread is golden brown and the goat cheese is soft and warm. Cut in half and serve.
