Sausage Red Pepper Scramble
- 2 Tbsp canola oil
- 2 cups frozen hash browns
- 1 Tbsp olive oil
- ¼ lb ground sausage
- 1 shallot, minced
- 1 red pepper, diced
- 4 eggs
- ¼ cup jack cheese, shredded
- ½ avocado, diced
Heat canola oil in a large pan over medium heat. Add hash browns and allow to brown well before flipping to brown the other side.
While hash browns are cooking, combine eggs into a bowl and stir well with a whisk or fork. Prep cheese and avocado.
Once hash browns are almost fully browned, heat olive oil in a second large pan over medium-high heat and add sausage. Cook, stirring and breaking the up the pieces, for 1 minute. Add shallot and red pepper and continue to stir until vegetables are soft and sausage is cooked through.
Add hash browns to the pan and stir to evenly combine with the pepper, onion and sausage. Pour eggs over entire mixture and stir constantly, then add cheese. When eggs are just cooked through, remove from heat, plate, and serve topped with avocado.
