Sky's Prime Ribeye

Credit to my brother-in-law Sky for teaching me this delicious method.

  • Salt and pepper to taste
  • Two 2” thick cuts of prime ribeye

Preheat oven to 375. Put a cast iron skillet into the oven while it is heating. When oven is up to temperature, pull the cast iron out and place it over a lit burner turned to medium-high. Place steaks in the pan for 1 minute, then flip them over and transfer the pan to the oven.

Roast for 10-12 minutes, and then check the temperature. Interior of steaks should be 125 minimum for medium-rare, and 135 for medium.

Slice to desired thickness and serve with drippings from pan spooned over the top. Pair with potatoes and greens for a hearty meal, or serve atop crostini for an appetizer.
