Named after my closely held belief that almost any dish becomes tastier with lemon + salt. 

Roasted Zucchini

Roasted Zucchini

  • 1 small green zucchini
  • 1 small yellow zucchini squash
  • 2 Tbsp olive oil
  • Salt and pepper to taste
  • 2 Tbsp pepitas
  • 1 Tbsp feta, crumbled

Preheat oven to 350.

Slice zucchini very thinly – preferably on a mandolin but a sharp knife would work fine. Dump slices into a large ziplock bag along with the olive oil, and shake well to coat evenly.

Pour onto a large baking sheet and use a spatula to distribute evenly across the surface. Salt and pepper to taste, then sprinkle on pepitas.

Place baking sheet in a middle rack in the oven and roast for 25 minutes. Remove from oven briefly to sprinkle on feta, then return to oven for another 10 minutes. Serve hot.
