Roasted Zucchini
- 1 small green zucchini
- 1 small yellow zucchini squash
- 2 Tbsp olive oil
- Salt and pepper to taste
- 2 Tbsp pepitas
- 1 Tbsp feta, crumbled
Preheat oven to 350.
Slice zucchini very thinly – preferably on a mandolin but a sharp knife would work fine. Dump slices into a large ziplock bag along with the olive oil, and shake well to coat evenly.
Pour onto a large baking sheet and use a spatula to distribute evenly across the surface. Salt and pepper to taste, then sprinkle on pepitas.
Place baking sheet in a middle rack in the oven and roast for 25 minutes. Remove from oven briefly to sprinkle on feta, then return to oven for another 10 minutes. Serve hot.
