Spicy Soba Noodles with Scallions and Sesame Oil
- 1 packet soba (buckwheat) noodles
- 2 Tbsp sesame oil
- 1 serrano pepper, finely minced (seeded, for less heat)
- 1 garlic clove, crushed
- 1 Tbsp red pepper flakes (or 1 tsp, for less heat)
- 1 Tbsp soy sauce
- 1 Tbsp mirin or sake
- 5 scallions, finely chopped
- 5-10 sprigs cilantro, finely chopped
- 2 Tbsp sesame seeds, toasted
- Salt to taste
Bring a well-salted pot of water to boil over high heat. Add noodles and cook until al dente. Drain, reserving 1 cup cooking liquid.
In a separate sauce pan, heat sesame oil over medium-high heat. Add serrano, garlic and red pepper flakes and stir for 1 minute. Add in soy sauce and mirin and reduce for 3-5 minutes. Remove from heat.
When pasta is done, return to pot and add sauce. Toss well to coat, then add scallions, cilantro and sesame seeds. Toss to combine, adding pasta water as needed to keep the mixture moist. Season with salt to taste and serve hot or cold.
