BLT with Tater Tots
- 1 bag ore ida tater tots
- 1 pack of bacon
- 1 heirloom tomato
- 1 avocado
- 1 head green or red leaf lettuce
- Mayo to taste
- Crusty sourdough bread
- Ketchup to taste
Preheat the oven to 450. Spread desired amount of tater tots on baking sheet, and place in oven. Allow to cook for 25-45 minutes or to desired doneness.
While tots are cooking, place a large frying pan on the stove over medium heat and cook bacon in batches, frying until brown and crisp. Transfer finished pieces to a paper towel-lined plate to cool.
Slice the tomato and avocado to desired thickness, then rinse lettuce and pat dry with paper towels.
Slice to desired thickness and toasted to preference. Spread avocado on one slice of bread and mayo on the second. Layer bacon, tomato and lettuce on top of the avocado, then top with second slice.
Remove tots from oven. Serve immediately with ketchup and prepared sandwich.
