Stir-Fried Beef with Oyster Sauce
- 1 tsp cornstarch
- 1 Tbsp soy sauce
- 1 Tbsp rice wine or sake
- 1 Tbsp sesame oil
- 1 lb flat iron steak, thinly sliced across the grain
- 5 Tbsp canola oil, divided
- 3 cloves garlic, crushed
- 2 Tbsp shredded ginger
- 1 red bell pepper, julienned
- 3 scallions, cut into 1-inch pieces
- 3 Tbsp oyster sauce
- 1 tsp sugar
- 2 Tbsp water
- 1-2 cups brown or white rice, cooked to directions on package
Combine cornstarch, soy sauce, rice wine and sesame oil in a gallon ziplock bag. Stir in beef and let marinate for 30 minutes.
Heat wok over high heat and add 3 Tbsp canola oil. Fry beef until cooked through, about 2 minutes, then set aside on a plate.
Clean the wok, then reheat over high heat. Add 2 Tbsp canola oil, garlic and ginger. Stir until fragrant then add bell pepper and scallions and toss for 1 minute. Add beef, oyster sauce, sugar and water. When it comes to a boil, stir and serve immediately over rice.
